Pork Chalupa

Leanne D.

This is my one of my family's favorite meals. The boys like it as a tostada ,my husband and I prefer it eaten as a one dish meal with flour tortillas.
I think for the bereavement meal we will serve it as a one dish meal and have warm corn and flour tortillas.

pinch tips: Flour, Eggs & Breading Techniques

Stove Top

3 lbs boneless pork roast
1 lb pinto beans
4 cloves garlic,minced
1 1/2 t dried oregano
large can diced green fire roasted green chilies(mild)
1 t salt or to taste
chicken broth

shredded cheese
shredded lettuce
chopped onion
chopped tomato

Directions Step-By-Step

Combine pork, beans and seasonings in large pot.Add enough broth to cover meat.Cover and simmer about 6 hrs.Break up meat and cook, uncovered until thick,an additional hour.
Place chalupa on top of fried tostada shell or place in a bowl ,eat as a stew adding all or some of the toppings and eat with warm tortillas.
