This roasted pork loin is an easy weeknight recipe. The roast is tender and juicy. A peppercorn crust adds a bit of heat, but the creamy peppercorn dipping sauce cools it down. Simple and satisfying!

Ingredients

lean pork loin roast (2 1/2 lbs)
3 Tbsp
Dijon mustard
1 Tbsp
low-fat buttermilk
1 c
breadcrumbs
2 Tbsp
pepper
2 tsp
crushed mix peppercorns
t tsp
chopped thyme
1/4 tsp
salt

CREAMY PEPPERCORN SAUCE

3/4 c
buttermilk
1/3 c
fat free sour cream
3 Tbsp
Parmesan cheese, grated
3 Tbsp
mayo
1 1/2 Tbsp
lemon juice
1 1/2 tsp
mixed peppercorns, crushed
1/4 tsp
salt

Directions Step-By-Step

Preheat oven to 325 degrees. Combine mustard and buttermilk. Spread over roast. Combine breadcrumbs, pepper, salt, thyme, and peppercorns in a bowl. Press mixture evenly over roast.

Place roast on broiler pan coated with cooking spray. Bake for 2 hours and meat thermometer reads 160 degrees. Let stand 10 minutes before slicing.

Combine all ingredients for the creamy peppercorn sauce in a bowl. Serve with pork loin slices.
