Bring a pot a water to a boil. Drop head of cabbage in for two to three minutes to loosen the leaves and make them pliable for the rolls. Turn oven on to 350 degrees.
To make the tomatoes sauce to cook the rolls in, start with dicing the onions, celery, and carrots. Saute in a pan for two or three minutes or until onions are opaque. Stir in the garlic and cook for one more minute.
Add the Italian seasonings, the tomatoes with juice, chicken stock and simmer for ten minutes.
In a large bowl, mix the hamburger, minced garlic, one egg, bread crumbs and parsley together. Salt and pepper to taste, approx one table spoon of salt and 1/2 teaspoon of pepper.
Peel leaves from head of cabbage. Take a heaping spoon of the meat mixture and place in the cabbage leaf. Roll up and tuck the ends under to make a roll. Place in a roasting pan.
Pour the tomatoes and vegetables mixture over the rolls. Cover and bake at 350 degrees for one hour or until fully cooked and bubbling. Serve with fresh bread and garlic mashed potatoes.
