blt quesadilla with avocado mayo
I've combined my favorite lunch sandwich with my favorite condiment to come up with the absolute best quesadilla I've eaten in a long time! What can I say about bacon, lettuce, tomatoes, avocado and cheese? It's the perfect marriage of flavors and foods.

Ingredients
- 16 slices thick cut mesquite smoked bacon, cooked crisp and chopped
- 8 large tortillas, whole wheat
- 1 cup tomatoes, diced
- 2 cups shredded lettuce
- 1/2 cup cheddar cheese
- - sour creamr garnish
- - pace salsa, for garnish
- AVOCADO MAYONNAISE
- 2 large ripe avocados, mashed with a fork
- 1/2 cup hellmanns mayonnaise
- 1/4 teaspoon garlic powder
- 1/8 teaspoon fresh lime juice
- - salt and pepper to taste

Step 1AVOCADO MAYONAISE: Mix all the ingredients together in a small bowl.

Step 2QUESADILLAS: Spread Avocado mayo on your tortilla. I like a lot!

Step 3Heat Tortilla in the skillet just until warm. Add cheese, bacon, tomato and lettuce.

Step 4When cheese starts to melt, fold tortilla in half. Brown on both sides.

Step 5Serve with sour cream and your favorite salsa!
