American West Pork & Beef Braids

INGREDIENTS
FOR THE BRAIDS:
(6-inch) water-soaked wooden skewers
(1-inch thick x 1-inch wide x 6-inches long) strips of well-trimmed sirloin steak
(1/2-inch thick x 1/2-inch wide x 10-inches long) strips of well-trimmed pork tenderloin
grape tomatoes
poblano pepper, seeded & cut into 1/4-inch wide x 1-inch long strips
water soaked toothpicks
FOR THE MARINADE:
olive oil
Worcestershire sauce
soy sauce
black coffee
red wine vinegar
fresh lemon juice
cayenne
minced garlic
fine sea salt
black pepper
FOR THE REDUCTION:
red apple, peeled, quartered & cored
yellow onion, peeled and sliced into 1/2-inch thick slices
ripe mango, peeled and sliced off seed into four (1/2 inch) thick slices

minced garlic
beef broth
packed brown sugar
apple juice
Dijon mustard
balsamic vinegar
teriyaki marinade
hot sauce
corn starch
