Veggie, Beef, and Tortellini Soup

I like to add extra spices like oregano, Italian seasoning, and/or crushed red pepper. You can also leave out the corn, broccoli, carrots, green beans, and cauliflower. Cook everything but the pasta for 20 minutes, add pasta, cook for anther 20 minutes.

Ingredients

1 bag(s)
tortellini, cheese stuffed
1 lb
ground beef
1 can(s)
italian diced tomatoes
1 jar(s)
picante sauce
3 can(s)
chicken broth
1 tsp
basil
1 can(s)
whole kernel corn, unsalted
1 can(s)
green beans
1 c
chopped carrots
1 c
chopped broccoli
1 c
chopped cauliflower

Directions Step-By-Step

Brown the ground beef and set aside.

In a large pot, combine ground beef, Picante sauce, diced tomatoes, chicken broth, and basil. Let simmer for 15 minutes.

Add chopped carrots to the pot. Let simmer for another 5 minutes.

Add tortellini pasta, green beans, broccoli, corn, and cauliflower. Simmer for another 20 minutes.

Let sit for a few minutes before serving with salad, garlic bread, or whatever floats your fancy.
