I had tomatoes from the garden that were about to get over-ripe, so I threw together a quick sauce. I wanted it to be all about the luscious ripe tomatoes, so I didn't do much to it. It was a quick dinner. If you don't have fresh tomatoes use canned San Marzano tomatoes. They are the closest to fresh in flavor.

A gourmet pasta dish is made easily with this fresh tomato pasta and Italian sausage. Fresh tomatoes, garlic, and onion simmer in a light marinara sauce with a bright summertime flavor. Juicy and tender Italian sausage is grilled and served alongside vermicelli noodles tossed in the beautiful fresh marinara sauce. Sprinkled with grated Parmesan as the final touch, this flavorful summer dinner is fantastic.

Ingredients For pam's fresh tomato pasta & italian sausage

  • 3 c
    diced fresh tomatoes
  • 1/2 c
    diced onion
  • 1 clove
    garlic, minced
  • 1 Tbsp
    olive oil
  • 1/2 tsp
    Italian seasoning
  • 1/3 c
    sliced Kalamata olives
  • 1 Tbsp
    tomato paste
  • 1 Tbsp
    sugar, approximate, adjust based on acidity of the tomatoes
  • 1/2 lb
    vermicelli pasta or spaghetti of choice
  • 4
    Italian sausages
  • Parmesan cheese

How To Make pam's fresh tomato pasta & italian sausage

  • Heating up the grill.

    Heat up your grill for the sausages. If you prefer they can be pan-fried.
  • Heating water to boil the pasta.

    Put water on to boil for the pasta and add salt.
  • Grilling the sausages.

    Put the sausages on the grill. My husband does this while I do the rest. If you need to, cook the sausage first. Then do the pasta.
  • Sauteeing onion and garlic in a skillet.

    Heat the oil in a skillet. Saute the onion and garlic until tender.
  • Tomatoes, tomato paste, and seasonings added to the skillet.

    Add the tomatoes, tomato paste, spices, salt and pepper. Turn to simmer.
  • Pasta cooking in boiling water.

    While that's cooking drop your pasta in the water.
  • Adding sugar and olives to the sauce.

    Taste your sauce and add sugar as needed. Add olives.
  • Adding pasta and pasta water to the sauce.

    Drain pasta and reserve pasta water. Add pasta to the sauce. Add pasta water to loosen, if needed.
  • Sausage added and Parmesan cheese sprinkled on top.

    Serve the pasta with the sausage on the side. Sprinkle Parmesan cheese on the top.
