Ingredients For cheesy fish medley casserole

  • 4 c
    frozen shredded hash brown potatoes, thawed
  • 1 1/4 c
    cubed processed American cheese
  • 1 c
    shredded Parmesan cheese, divided
  • 4 Tbsp
    avocado oil, divided
  • 3
    banana peppers, sliced
  • 1
    red onion, diced
  • 1
    carrot, chopped
  • 2 Tbsp
    Old Bay seasoning, divided
  • 1 Tbsp
    margarine
  • 15
    frozen fish sticks
  • 8
    frozen fish patties
  • 20
    frozen fish nuggets
  • 1 c
    heavy cream
  • 1 can
    condensed cheddar cheese soup
  • 8 oz
    cream cheese, softened
  • 1 c
    crumbled blue cheese
  • 8 oz
    gouda cheese, shredded
  • 1 c
    shredded sharp cheddar cheese

How To Make cheesy fish medley casserole

    Preheat oven to 375 degrees F.

    Coat a 3-quart baking pan with cooking spray. Add thawed shredded hash brown potatoes and spread evenly.

    Sprinkle with American cheese cubes and 1/2 cup shredded Parmesan cheese on the pan.

    Heat 2 tablespoons avocado oil in a large, deep skillet over medium heat. Add sliced banana peppers, diced red onion and chopped carrot, saute for 5 minutes until tender. Season with 1 tablespoon Old Bay seasoning. Remove from heat.

    Heat margarine and remaining avocado oil in a medium saucepan over medium heat. Add fish sticks, ish patties and fish nuggets; cook for 3 minutes or until cooked and crispy. Remove from heat and slice fish patties.

    In a medium bowl, combine heavy cream, soup, cream cheese and remaining Old Bay seasoning; mix well until blended.

    Spoon soup mixture into fish mixture in the saucepan. Add cheeses and stir together until combined.

    Spoon evenly into a prepared baking pan. Sprinkle with remaining shredded Parmesan cheese.

    Bake for 25 minutes or until the casserole is bubbly.
