Angel Hair with Fresh Tomatoes and Garlic
I use plain angel hair for sodium reasons.
The toppings are excellent together

- 3 medium
- tomatoes, chopped
- 1 c
- (4 ounces) shredded mozzarella cheese
- 1/3 c
- chopped fresh basil or 1 tablespoon dried basil
- 2 clove
- garlic, minced
- 1 pkg
- (8 ounces) angel hair pasta
- extra virgin olive oil
- garnish with fresh basil leaves
1In large bowl, combine tomatoes, cheese, basil and garlic; set aside.
2In large saucepan, cook pasta according to package directions; drain.
3Toss pasta mixture with tomato mixture. Drizzle with extra virgin olive oil. Serve immediately.
