Grilled sausage and potato hash
This dish could totally be done on the grill.

- 5 small
- russet potatoes, wash and cubed
- 2 c
- grilled sausage, cubed
- 1/2 small
- diced onion
- anaheim pepper, diced
- **shredded cheese
- **chopped cilantro
- **seasoning of choice
1You can peel your potatoes, but I enjoy the rusticness of leaving the skin on, just wash well. Chop onion and pepper, add to pan with potatoes.
2Slow pan roast potatoes in oil of choice. Today I had some bacon fat so I used that. Once potatoes are tender, add in the sausage, stir to heat.
3Garnish with grated cheese,cilantro, pico de gallo or salsa. I always like to serve sunny side up eggs with hash.
