Ingredients

  • SALAD
  • 24 ounces mixed lettuces (tender green tango, red oak, sweet frisee, lollo rossa)
  • 2 small mango, diced
  • 1 - avocado, diced
  • 1 small red onion, diced
  • 2 pounds salmon fillet
  • 8 ounces alfalfa sprouts
  • 2 tablespoons sesame seeds
  • 2 tablespoons chia seeds
  • 2 tablespoons sunflower seeds
  • VINAIGRETTE
  • 6 cups mango puree
  • 3 tablespoons honey
  • 2 teaspoons mustard
  • 2 tablespoons lemon juice
  • - salt and pepper to taste
  • 3/4 cup red wine vinegar
  • 1 3/4 cups olive oil

How To Make salmon with mango vinaigrette

  • Step 1
    Wash vegetables thoroughly.
  • Step 2
    Cut the mango, avocado and the onion into small cubes.
  • Step 3
    Remove the skin from the fish fillet and cut into 1 inch cubes.
  • Step 4
    Brush the salmon cubes with olive oil.
  • Step 5
    Grill the salmon cubes for 5 to 6 minutes.
  • Step 6
    Meanwhile, in a bowl, combine mango puree, honey, mustard, lemon, vinegar, salt and pepper and let infuse for a few minutes.
  • Step 7
    Add olive oil to mixture slowly while mixing continuously until emulsified.
  • Step 8
    Adjust seasoning to taste.
  • Step 9
    In 8 small bowls add the lettuce, avocados, onions, handle and the salmon
  • Step 10
    Top with vinaigrette and alfalfa sprouts and seeds
