Ingredients

3/4 lb
fresh salmon or steelhead
1/4 c
yellow (or red) pepper, minced
1/4 c
onion, minced
chopped fresh spinach
2 clove
garlic, minced
1/4 c
panko bread crumbs
1/4 c
cracker meal
1/4 c
fontina cheese, grated
1 medium
egg
2 tsp
lemon juice
salt and pepper to taste
tartar sauce

Step-By-Step

1Roughly chop the salmon and mix with all other ingredients.

2Form into patties and saute in a little oil (or in a non-stick skillet with cooking oil spray) for about 5 minutes per side.

3Garnish with tartar sauce and fruit.
