Oven-baked Catfish

Catfish is sometimes called a rough fish, however, this recipe will soon dispell any predetermined ideals you may have had.
Catfish is considered a very good table fare by many, including yours truly.

1 to 1 1/2 lb
catfish fillets
1 c
panko bread crumbs
2 Tbsp
finely grated parmesan cheese
2 Tbsp
sesame seed
1/2 tsp
cajun seasoning
salt and pepper
1/2 c
low fat greek yogurt
1 Tbsp
fresh dill, finely chopped
1 Tbsp
fresh parsley, finely chopped
lemon wedges


1Heat oven to 400 degrees.
Spray a large baking sheet with non-stick spray and set aside.
2Combine yogurt, dill, parsley and about a tablespoon of lemon juice in a shallow bowl
3Mix Panko, cheese, sesame seeds, Cajun seasoning with salt and pepper in another shallow bowl.
Dip each fillet into the yogurt mixture, then roll in the Panko mixture.
4Arrange the fillets in a sincle layer on baking sheet and bake for 20 to 25 minutes, or until fish has a golden brown coating, is firm, and beginning to flake with a fork.
5Serve with additional lemon wedges.
