Ingredients

2 lb
bone in chicken thighs or breast
2 c
parboiled rice
1/2
onion, diced
1/2
green pepper, diced
4
garlic cloves,mashed
2 Tbsp
olive oil
1 tsp
bijol(yellow food coloring)
few green olives
red pimentos for garnish
cilantro, for garnish
salt/pepper to tast
1
bay leaf
1 small
envelope chicken bouillon
3 c
water
1/2 c
tomato sauce

Step-By-Step

1Bring to boil the water, chicken and chicken bouillon, reduce heat and simmer about 20 mins....take out chicken and let cool to shred....save the broth
2meanwhile, sauté onions, peppers, garlic in olive oil, add in the tomato sauce, bay leaf and olives.
3add in the 2 cups of rice and bijol...stir all together
4add in the saved chicken broth about 2 cups and the shredded chicken, bring to boil....stir, cover and put on low 20-30mins...till all water absorbed by rice.
5gently fluff the rice and add the red pimentos and cilantro...ENJOY
