Pre-heat the oven to 400 degrees.
Pound the chicken breasts into flat pieces. You may want to cut them in halves or fourths.
Mix all the ingredients and dredge the chicken cutlets through the mixture until coated well.
Bake for 20 to 25 minutes or until no longer pink in the middle. Serve with brown or wild rice to keep it light. Also goes well with steamed herb green beans.
