loaded baked potato casserole
Baked potatoes are such a blank canvas for all kinds of toppings. Some like them simple with only butter and sour cream. Others, like me, load them up with bacon, broccoli, cheese and chicken.

Serves 4 to 6
Ingredients
- 4 large russet potatoes, cubed
- 2 cups chopped broccoli
- 3 tablespoons olive oil
- 4 large chicken breasts, cubed
- 1 cup bacon, crumbled
- 1 1/2 cups shredded cheddar cheese
- 4 - chopped scallion (roughly 1 green onion - both green and white parts)
- 3 tablespoons butter, sliced
- - salt & pepper, to taste
How To Make loaded baked potato casserole

Step 1Preheat oven to 350 degrees

Step 2Have a large casserole dish or an9 x 13 pan ready.

Step 3In a large bowl, toss together the potatoes, broccoli, olive oil, raw chicken and 1/2 teaspoon salt.

Step 4Stir in the bacon and 3/4 cup cheese.

Step 5Lay butter slices over casserole. Season with another 1/2 teaspoon salt & 1/2 teaspoon pepper.

Step 6Spoon the potato mixture into the casserole dish.

Step 7Cover with foil and bake 60 minutes.

Step 8Uncover sprinkle with the remaining 3/4 cup of cheese and bake for another 15 minutes or until the potatoes are soft.

Step 9Remove from the oven and sprinkle green onions on top. Serve hot.
