Baked potatoes are such a blank canvas for all kinds of toppings. Some like them simple with only butter and sour cream. Others, like me, load them up with bacon, broccoli, cheese and chicken.

Ingredients

  • 4 large russet potatoes, cubed
  • 2 cups chopped broccoli
  • 3 tablespoons olive oil
  • 4 large chicken breasts, cubed
  • 1 cup bacon, crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 4 - chopped scallion (roughly 1 green onion - both green and white parts)
  • 3 tablespoons butter, sliced
  • - salt & pepper, to taste

How To Make loaded baked potato casserole

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    Have a large casserole dish or an9 x 13 pan ready.
  • Step 3
    In a large bowl, toss together the potatoes, broccoli, olive oil, raw chicken and 1/2 teaspoon salt.
  • Step 4
    Stir in the bacon and 3/4 cup cheese.
  • Step 5
    Lay butter slices over casserole. Season with another 1/2 teaspoon salt & 1/2 teaspoon pepper.
  • Step 6
    Spoon the potato mixture into the casserole dish.
  • Step 7
    Cover with foil and bake 60 minutes.
  • Step 8
    Uncover sprinkle with the remaining 3/4 cup of cheese and bake for another 15 minutes or until the potatoes are soft.
  • Step 9
    Remove from the oven and sprinkle green onions on top. Serve hot.
