boned chicken breasts
Pound boneless chicken breasts with the side of a saucer to thin & tenderize.
Sprinkle both sides lightly with flour.
Place in heated olive oil & cook 3-4 minutes on each side until white.
Drain any extra olive oil. Add sliced lemons & capers.
Pour enough cooking sherry over all to cover the chicken. Lower heat & cook approximately 6-8 minutes more, or until chicken is cooked all the way through.
