DELICIOUS SPICY CHICKEN NACHOS
Slow Cooker Crock Pot
chicken breasts w/bone & skin
mild green chilies
salt or to taste
chipotle peppers in adobo sauce-whole
corn tortilla chips
1Rinse off chicken and place in crock pot.
2Add one onion, finely chopped, 1/4 cup fresh cilantro, juice of one lime, cumin, worcestershire sauce, chili powder, one can green chilies, water, & salt to taste.
3Put crock on high. Cook for 2 hours. Remove from crock & dispose of bones and skin. Cut chicken breasts into small chunks & return to crock with spices to cook another 2 hours or until done.
4When done, use liquid to make thickening (1 c liquid plus 1/2 cup flour), stir well and let simmer for 1/2 hour. Pour over corn tortilla chips.
5Serve with your favorite toppings - shredded cheeses, sour cream, chopped onions, sliced avocados, fresh cilantro, green chilies. Enjoy!
