Sprinkle baking soda over chicken and lightly rub and let sit 30 minutes. Rinse well. Now chicken is ready to use.
Add olive oil to saute pan and saute onions until translucent. Add onions to food processor and add tomatoes, turmeric, cumin, salt, chili powder, pepper, garlic, coconut milk and ginger paste. Process until smooth.
Add chicken to saute pan and pour coconut milk mixture over top. Add bay leaves. Cook on med for 30 minutes or until chicken is done.
Meanwhile add chicken stock to pan with sazon goya seasoning. Bring to a boil. Add rice and cook over med heat for 20 minutes or until rice is cooked and most of liquid is absorbed.
