Ingredients

CHICKEN

chicken breasts, boneless and skinless
1 1/2 c
orange juice
3 Tbsp
lime juice
1 Tbsp
crushed garlic
salt and pepper to taste

SALSA

1 1/2 c
fresh pineapple, cut into small chunks (can also use crushed pineapple, drained)
1
jalapeno pepper, finely chopped
1/2 c
finely chopped red bell pepper
1/4 c
red onion, chopped
1/4 c
fresh cilantro, chopped

Directions Step-By-Step

Make slits in the chicken breasts with the tip of a sharp knife to allow the marinade to soak into the breasts. Place breasts in a plastic container.

Mix juices, garlic salt and pepper. Pour over breasts and refrigerate. Turn often at the start to allow as much marinade as possible to soak in. Refrigerate overnight.

Combine salsa ingredients in a bowl and mix well. Set aside while cooking the chicken.

Grill or bake chicken until juices run clear. Top with the salsa before serving.
