Barbecued Roasted Chicken with Parmesan Potatoes

An easy, great barbecued, flavorful chicken without grilling. It's oven-roasted in just under an hour. One dish, low fat meal.

Ingredients

1 lb
small red potatoes (about 8), quartered
1/4 c
italian vinaigrette dressing
1 tsp
chili powder
1 lb
4 small boneless, skinless chicken breasts
1/4 c
barbecue sauce
2 Tbsp
grated parmesan cheese

Directions Step-By-Step

Toss potatoes with dressing in 13 X 9 inch nonstick pan; sprinkle with 1/2 tsp. chili powder.
Bake 25 minutes, at 400 degrees.

Stir potatoes; push to sides of pan.
Place chicken in single layer in center of pan; sprinkle with remaining chili powder.
Drizzle with barbecue sauce.

Bake 20-30 minutes or until chicken is done (165 degrees) and potatoes are tender.
Transfer chicken to platter.
Stir potatoes to evenly coat with pan drippings.
Spoon around chicken on platter; top with Parmesan.

Using one pan to roast the potatoes along with the chicken makes for speedy cleanup.
