1You can use a whole Rotissere Chicken, or cook 3 to 4 chicken breast if you prefer, if using chicken breast put in a pot cover with water and boil till done and tender.
2Put Cream of soups and cream cheese that is room temp. in a bowl and mix well till blended. When chicken is done if using breast let them cook then cut up in bite sized pieced ( I prefer the breast) and add to the bowl with the soups and cream cheese and stir to blend in the chicken.Spread in a 9x13" dish that has been lightly sprayed with cooking spray. Bake on 350 degrees for 45 minutes or until done. Stirring a couple times during baking.
3Right before you are gonna take it out of the oven put your butter in a pan and let it melt then add one sleeve of Ritz Crackers to the butter that has been lightly broken up (YOU DON'T WANT THEM CRUSHED UP TOO FINE) stir fry the crackers until golden brown in the butter. Take the casserole out of the oven and spread the toasted crackers on the top and serve. Serve with corn on the cob and a tossed salad or other veggies to your liking.
