Ingredients For ratatouille

¾ medium onion, diced

¼ cup smart balanced omega oil

1 small zucchini, cut into ¼-inch cubes

1 clove garlic, finely chopped

1 small green bell pepper, cut into small pieces

2 tomatoes, peeled and coarsely chopped
-
¾ small eggplant, peeled and cubed
-
½ tsp basil
-
½ tsp oregano
How To Make ratatouille

1Sauté onion in oil in a large skillet until transparent. Add all remaining ingredients. Cover and cook over medium heat for about 45 minutes, stirring occasionally. Add a little water if necessary. May be served hot or chilled.
