There isn't an ounce of German in me, but my husband who grew up with his grandmother's German cooking loves this dish. I have used different sausages; chicken-apple, Polish, smoked and even hot dogs for a kid's version. You can use your favorite mustard as well plus serve extra on the side. This is super easy, good comfort food. I like to serve it with a nice mixed green salad and French bread.
Cube 8 red potatoes to bite size. Put in large pot filled with cold water. Bring to a boil and cook until just soft about 15 minutes. Drain water.
Put cooked potatoes in 3 quart baking dish. Mix in one can of sauerkraut or half of 32 oz jar. Season with pepper and garlic salt to taste. Cut up cold butter into slivers and scatter on top of potatoes.
Cut one package of sausages into 1/4 inch pieces at an angle. Arrange cut sausage on top of the potatoes to resemble a blooming flower. Squeeze your favorite mustard on top of the arranged sausage.
