spinach fetta pinwheels
Flank steak is one of the most flavorful steaks there is, along with skirt steak and hanger steak. I love to cook with those the most because they are quick, easy and you can do so many things with them. Plus they are relatively cheep. Pinwheels are a great way to load a flank steak up with all kinds of fillings.

Ingredients
- 1 package (10-ounces) frozen spinach, thawed and well drained
- 1/3 cup feta cheese, crumbled
- 1/4 cup panko bread crumbs
- 1/2 teaspoon thyme, dried
- 1 pound beef flank steak, tenderized
- - wooden skewers, soaked in water for 30 minutes
How To Make spinach fetta pinwheels

Step 1Preheat the grill to medium.

Step 2Combine spinach, feta, bread crumbs, and thyme in a bowl.

Step 3Place the flank steak flat on a clean cutting board. Spread the filling evenly over the steak.

Step 4Starting from one long end roll up the steak, insert a wooden skewer through the roll at every 1 1/2-inch intervals.

Step 5With a sharp knife, cut the roll into 6 equal portions between the skewers.

Step 6Place on the grill and cook 12 to 14 minutes.

Step 7Serve with grilled asparagus and rice pilaf.
