Flank steak is one of the most flavorful steaks there is, along with skirt steak and hanger steak. I love to cook with those the most because they are quick, easy and you can do so many things with them. Plus they are relatively cheep. Pinwheels are a great way to load a flank steak up with all kinds of fillings.

Ingredients

  • 1 package (10-ounces) frozen spinach, thawed and well drained
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup panko bread crumbs
  • 1/2 teaspoon thyme, dried
  • 1 pound beef flank steak, tenderized
  • - wooden skewers, soaked in water for 30 minutes

How To Make spinach fetta pinwheels

  • Step 1
    Preheat the grill to medium.
  • Step 2
    Combine spinach, feta, bread crumbs, and thyme in a bowl.
  • Step 3
    Place the flank steak flat on a clean cutting board. Spread the filling evenly over the steak.
  • Step 4
    Starting from one long end roll up the steak, insert a wooden skewer through the roll at every 1 1/2-inch intervals.
  • Step 5
    With a sharp knife, cut the roll into 6 equal portions between the skewers.
  • Step 6
    Place on the grill and cook 12 to 14 minutes.
  • Step 7
    Serve with grilled asparagus and rice pilaf.
