The Flat Iron or Blade steak is the best of the chuck cuts of beef. This steak gets grilled fast to keep it tender and topped with a spicy pesto to give it extra flavor.

Ingredients

(6 to 8 ounces each) beef shoulder top blade steaks (flat iron)
3 clove
(large) garlic, minced
salt (to taste)

PESTO:

1/3 c
basil pesto sauce
1 Tbsp
lemon juice
2 tsp
grated lemon peel
1/2 tsp
crushed red pepper

Combine basil pesto sauce, lemon juice, lemon peel and crushed red pepper.

Press garlic onto beef steaks. Please steaks on grid over medium heat.

Grill, covered for 10 to 14 minutes for medium rare to medium doneness, turning once.
