Slow Cooker Honey-mustard Pot Roast

I love slow cooked cuts of beef, they are very easy to make and come out melt-in-your-mouth tender.
I keep on experimenting with different ingredients every time. All of my "experiments" so far have turned out tasting good, and this one here is one of the best.

Slow Cooker Crock Pot


2 Tbsp
olive oil, extra virgin
1 3/4 lb
beef bottom round roast
salt and pepper
1 1/2 tsp
garlic, minced
1 tsp
beef stock
1 c
3 Tbsp
honey mustard
1/2 c
chopped onions
1 can(s)
mushroom pieces (optional)
2 medium
potatoes cut into 1" cubes (optional)


1Sprinkle the roast on both sides with salt and pepper and garlic.
In a frying pan over medium heat add the olive oil, and sear the roast on all sides.
2To the slow cooker add the stock, water, honey-mustard and the onions and stir to dissolve the stock and mustard.
Move the roast with the pan drippings to the slow cooker, cover and cook on high for 5 hrs or low for 8 hrs.
3If you want; 1 hr before the end you can add the mushrooms and potatoes.
