shepherds pie with whipped cauliflower topping
Saturday nights at the bar is All You Can Eat Steak Night, Sunday night is Raven's Special Night. This week is Shepherds Pie with Whipped Cauliflower Topping. Why whipped cauliflower you ask, because I serve potatoes all the time. The whipped cauliflower adds more veggies to the mix and I think that it tastes better than plain ole mashed taters. Also, my regulars don't know that it's not taters and they could use all the veggies I can get into them!

Ingredients
- - nonstick cooking spray
- 1 pound ground beef
- 1 small onion, chopped
- 1 clove garlic, minced
- 1/2 teaspoon sea salt
- 1 teaspoon white pepper
- 1/2 teaspoon dried thyme
- 1 tablespoon ketchup
- 1 tablespoon flour
- 1 package (10 ounces) frozen mixed vegetables
- 1 package frozen cauliflower
- 1 cup sour cream
- 1/2 cup freshly shredded parmesan cheese
- 1/2 cup cold water
How To Make shepherds pie with whipped cauliflower topping

Step 1Preheat oven to 400 degrees.

Step 2In a large cast-iron skillet over medium-high heat, cook beef, onions and garlic until meat is browned.

Step 3Add salt, pepper, thyme and ketchup.

Step 4Sprinkle in flour and stir to combine.

Step 5Add water and frozen mixed vegetables. Cook until vegetables are warmed throughout and liquid has thickened.

Step 6Meanwhile boil cauliflower until very tender. Strain in colander, return to pan and add sour cream and parmesan.

Step 7Using a hand-held mixer, whip cauliflower until smooth.

Step 8Spread over meat mixture and bake uncovered for 20 minutes or until browned.
