Either you love hominy or you don't there is no in between. If you love hominy then you find all kinds of ways too use it. This is a really great way.

Ingredients

1 medium
onion, chopped
oil
1 lb
ground beef
1 large
can white hominy
1 can(s)
tomato soup
1 can(s)
rotel tomatoes and green chilies
1/2 lb
sharp cheddar cheese, grated
1 c
garlic, minced
salt to taste
pepper to taste
grated parmesan cheese, fresh

Step-By-Step

1Sauté onion and meat in a small amount of oil.
2Add hominy, soup, tomatoes with green chilies, cheese, garlic, salt and pepper.
3Pour into a covered casserole and refrigerate overnight.
4Preheat oven to 350 degrees. Bake, covered for 1 hour, uncover and bake 30 to 45 minutes longer. Sprinkle parmesan cheese on top
5Serve with a tossed salad and garlic bread.
