Ingredients

  • ROASTED GARLIC:
  • 2 bulbs garlic
  • 2 tablespoons olive oil, extra-virgin
  • GARLIC BUTTER:
  • 2 sticks butter, unsalted, room temperature
  • 2 tablespoons Parmesan cheese
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons Italian seasoning
  • 1 1/2 teaspoons parsley
  • 1/2 teaspoon red pepper flakes
  • TOMATO BASIL SALSA:
  • 1/4 cup olive oil, extra-virgin
  • 6 cloves garlic, minced
  • 4 medium roma tomatoes, diced
  • 3 tablespoons basil, fresh, cut into strips
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon pepper
  • BREAD:
  • 1 loaf sourdough bread, cut in 1/2 lengthwise
  • 4 ounces sun dried tomatoes, oil packed, chopped
  • 2 tablespoons Parmesan cheese
  • 2 cups mozzarella cheese, shredded

How To Make ultimate garlic bread

  • Step 1
    ROASTED GARLIC: Preheat oven to 350 degrees F. Slice off tops of garlic bulbs & drizzle each with 1 tbsp olive oil. Wrap in foil & bake for 1 hour. When done, unwrap foil & cool completely. Once cooled, squeeze cloves from skin. Set aside.
  • Step 2
    Meanwhile, prepare garlic butter...in a medium bowl, combine butter, parmesan, minced garlic, italian seasoning, parsley & red pepper flakes; mix well. Refrigerate.
  • Step 3
    TOMATO BASIL SALSA: In a medium saute pan over medium heat, combine oil & garlic. Cook until lightly browned, 2 minutes. Add tomatoes & heat through. Stir in basil, salt & pepper & remove from heat.
  • Step 4
    Preheat oven to 350 degrees F.
  • Step 5
    Combine roasted garlic, tomato basil salsa, sun dried tomatoes & parmesan cheese; mix well to combine. Set aside.
  • Step 6
    Spread garlic butter over bread. Bake 20 minutes or until browned.
  • Step 7
    Top bread with garlic/tomato mixture. Spread evenly with mozzarella cheese & bake 2 more minutes or until cheese is melted. Slice into pieces & serve.
