Spaghetti with Bacon and Onion Sauce
This one is from my old recipe file.
- 1 lb. bacon
- 2 large onions, chopped
- 2 1/2 cups drained canned italian style tomatoes, chopped
- 1/2 cup dry red wine
- salt, pepper
- 1 lb. spaghetti
- 1/2 cup grated parmesan cheese
1Cook spaghetti as pkg. direct. Put 1/4 cup of the bacon fat into a large skillet. Add onions. Sauté 3 minutes
2Add bacon, tomatoes and wine. Break up bacon. Season with salt and pepper. Remember that bacon is salty
3Simmer, uncovered, stirring occasionally for 5 minutes. Pour sauce over spaghetti; sprinkle with cheese.
