Ingredients

1 gal whole milk
1 qt half and half
1 qt water
3 Tbsp sugar
1 Tbsp sea salt
3 Tbsp lemon juice
1 qt buttermilk

Patsy's Notes:

I am a freak for heirloom recipes....I treasure them! This particular recipe I find is not cheap to make....but it is fun and something different. It makes about four cups.

 

Directions

Heat whole milk, half and half and water in a large pot until bubbles form around the side of the pan (approximately 180 degrees)

Add sugar and sea salt.

Mix the lemon juice with buttermilk and add to pot....you will see the curds start to form....cook another 20 minutes on low. Stir occasionally. Cool
and when cool pour into cheesecloth lined pot let the liquid drain out of it. Keep refridgerated.
