Roasted Vegetable Pizzas

Ingredients

1 small
red bell pepper, diced
1 small
zucchini, thickly sliced
1 small
yellow squash, thickly sliced
1 small
red onion, thickly sliced

VINAIGRETTE INGREDIENTS

1 Tbsp
oil
1 Tbsp
red wine vinegar
1 tsp
italian seasoning
5/8 tsp
pepper

PIZZA INGREDIENTS

4
italian bread shells
1/2 c
mozzarella cheese, shredded
2 Tbsp
parmesan cheese, grated

Step-By-Step

1Heat oven to 450. In a large bowl, combine all vegetables.
2In small bowl, combine all vinaigrette ingredients; mix well.
3Pour over vegetables; toss gently to coat.
4Place in ungreased 15x10x1" baking pan.
5Bake at 450 for 10 minutes.
6Meanwhile, place bread shells on ungreased cookie sheet.
7Stir vegetables; spoon onto shells.
8Bake at 450 for 4 to 6 minutes or until vegetables are tender and bread shells are hot.
9Sprinkle mozzarella and parmesan cheese over vegetables.
10Bake an additional 2 to 3 minutes or until cheese is melted.
