Ingredients For chicken cacciatore

  • 6
    chicken pieces
  • 1
    bell pepper, cleaned and sliced into rings
  • 1
    large sweet onion clised into rings
  • 1 can
    crushed tomatoes
  • 1/4 c
    deep red wine (optional)
  • 1/2 tsp
    oregano, dried
  • 1/4 tsp
    basil, dried
  • 1/2 tsp
    dried crushed garlic (fresh can be used)
  • 1/2 can
    tomatoe paste
  • 1 lb
    pasta of choice
  • water, boiling

How To Make chicken cacciatore

  • 1
    Prepare pepper and onion. Place in a deep frying pan
  • 2
    Slowly Saute the peppers and onion till tender and translucent. Remove from pan
  • 3
    Add another 2 Tablespoons to the pan. Clean chicken of all fat. Quick fry the chicken till lightly brown
  • 4
    Add the peppers and onions, cover with crushed tomatoes and add the spices. Simmer for 1 hour
  • 5
    Bring the water to a boil, salt liberally and cook the pasta.

    Server the Chicken Cacciatore over the pasta and put the grated Romano over the top. Serve with a salad.
