Bunyan's Diabetic Veal Scaloppini with Cream Sauce

Ingredients

1/2 c
whole wheat flour
sea salt and freshly cracked black pepper to taste
4 - 6
veal medallions
1/4 c
butter
4
shallots, minced
1/3 c
fresh mushrooms, chopped
2/3 c
cooked ham, chopped
1/4 c
whole wheat flour
1 c
1% milk
1 c
low fat swiss cheese, shredded

Step-By-Step

1Combine the first one half cup flour and salt and pepper in a small bag
2Place veal medallions one at a time in the bag and shake to coat
3Melt butter in a skillet and brown veal on both sides
4Remove and place in baking dish
5In the same skillet that you browned the veal in, saute shallots until tender
6Add mushrooms and ham
7Combine remaining one quarter cup of flour and milk and mix well
8Pour over shallots, mushrooms and ham and cook over medium heat until mixture starts to thicken
9Pour over veal and sprinkle with cheese
10Bake in a preheated oven at 375 until cheese melts
