Baked Zucchini Pizza Bites

My Grammie used to make this with her fried zucchini and would place the sauce and cheese over the top and heat it in the oven till the cheese melted. It was so yummy!

Well, I was getting ready to fry up the zucchini tonight and was thinking about how I could make it healthier without frying. I had made parmesan crisps before and thought if I greased the pan it just might work baking them first and then adding the sauce and cheese.
I am happy and very excited to say it worked and tasted yummy too.

In our home, we try to do "Meatless Monday's" twice a month at least and this was our dinner tonight with some toasted garlic bread.~~~my husband did say.."I want some pepperoni on here too" and I reminded him that it was a veggie version. lol

Even though it is light it is very satisfying meal for dinner.
I do hope you enjoy this healthier version of my Grammie's Zucchini Pizza.


4 - 6 medium
zucchini and/or squash
2 jar(s)
new york style pizza sauce (14 oz.)
1 pkg
provolone & mozzarella shredded blend (the best)
2 c
panko bread crumbs (plain or italian) approx.
1/2 c
parmesan cheese
salt and pepper to your taste
2 - 3 medium
this is approx. on amts as i did not measure anything. :-)

Directions Step-By-Step

Wash and slice your zucchini. I sliced mine a little thicker for a "meatier" bite.

Place your eggs into a bowl and whisk them. In another bowl your bread crumbs, Parmesan cheese, salt and pepper. Dip your zucchini into the egg and then bread mixture. Pat the bread onto the zucchini and have a nice thick breading on them. Place in another bowl. When finished place in a GREASED 9 by 14 pan.
Bake at 400 degrees for 12 to 15 minutes till nice and crispy brown on top. No need to turn them. Remove from oven.
Water down your pizza sauce slightly so that it will pour easily over the zucchini.
Then place your cheese on top. Top with a little more breadcrumbs if you like. A little Parmesan cheese over top is fine too.
Place back in oven for 7 to 10 minutes till it has a little brown crust on top.
Remove from oven and let sit for 10 minutes. Prepare some garlic toast to service with it.
Plate your pizza zucchini bites and your ready to eat.
Made this for dinner 8/12/2014 --- If serving for guests you could warm additional pizza sauce on stove and pour some onto the plate and then place your zucchini over that. Just an added touch for presentation.
If you have leftovers, these are just served up for lunch or dinner. Heat a little oil in your skillet. Then, place your pizza zucchini in and cover with lid. Cook it for about 5 minutes and the bottom becomes all crunchy with the bread crumbs and cheese.

Kim, This is really good we enjoyed it so much.I decided on this recipe this time but plan on trying the italian zucchini or yellow squash pie next time, that also sounds so good.I really luv this time of the year to get all fresh fruits & vegies.I used to have a garden every summer & I would can alot of our vegies & fruit's miss doing that.Thanks again for your recipe... will be making it again. Hi Candi, it sure is zucchini time. lol I just made zucchini bread yesterday and do look forward to making this recipe again very soon. I also made the recipe I have posted for Italian Zucchini or Yellow Squash Pie. It is another zucchini recipe that we love. I think it tastes even better heated up in the oven the next day. Looking forward to hearing from you.

Kim, Omgoshhhhhhhhhh this looks so delicious. Was looking for a recipe different from all the ones I have to use up a couple zucchini's going to try this tonight. Think I will also add green pepper we luv them. You sound like me on some of my recipes I hardly ever measure stuff. Of course on making cakes it's different..even then sometimes I add a little more of of things to our own taste :-) Thanks for the recipe I'll let you know how it turned out.Hugs Candi
