Angel Hair Pasta With Plum Tomatoes & Fresh Basil

- 6 oz angel hair pasta
- 1 tbsp extra virgin olive oil
- 1 garlic clove, crushed
- 6 plum tomatoes, peeled, seeded and chopped
- ½ cup minced fresh basil
- ½ tbsp salt
- ground pepper, to taste
- 2 tbsp balsamic vinegar
- 1½ oz parmesan cheese
1Cook pasta as pkg. directs. Drain; set aside and keep warm. In large nonstick skillet, heat toil. Add garlic and sauté until fragrant, about 30 seconds. Add tomatoes and cook, stirring as needed, until softened, about 5 minutes. Stir in basil, salt and pepper; cook until tomatoes are very soft, about 5 minutes. Pour over pasta; toss with vinegar. Seve, topped with Parmesan. 268 calories per serving.
