Ingredients

3 lb
dressed whitefish or other fish, boned
1/4 c
chopped onion
3 Tbsp
chopped green pepper
1 Tbsp
butter
12 oz
can whole kernel corn, drained
1 c
soft bread crumbs
2 Tbsp
chopped canned pimiento
1/8 tsp
dried thyme, crushed
2 Tbsp
salad oil
paprika, for garnish, if necessary
parsley for garnish, if necessary

Step-By-Step

1Sprinkle inside of fish with salt.
Place in well greased shallow baking pan.

2In a saucepan cook onion and pepper in butter.
Stir in next 4 ingredients and 1/2 teaspoon salt
Spread stuffing loosely over fillets. Roll fillets and place seam side down, in pan

3Brush with oil; cover with foil.
Bake at 350 F for 45 to 60 minutes
