slightly beaten egg yolks
Melt butter in chafing dish or pan; blend in flour; gradually stir in cream. Cook slowly, stirring constantly till sauce thickens.
Stir small amount sauce in to egg yolks; return to pan and cook till blended, stirring constantly, about 1 minute.
Add cleaned raw shrimp and salt; heat thoroughlyj. Add Sherry and lemon juice. Serve over hot toast points. Sprinkl with paprika. Makes 5 or 6 servings.
