Ingredients For shrimp & crab gumbo

1 lbshrimp, peeled & deveined (tails on)

1/3 call purpose flour
-
2 Tbspolive oil, extra virgin

2 lgonions, chopped
-
1 mdgreen bell pepper, chopped
-
4 stalkscelery, sliced
-
5 clovegarlic, minced
-
32 ozbeef broth, reduced sodium
-
3 cwater
-
16 ozokra, sliced
-
1 lbcrabmeat, fresh, cooked
-
3 cwhite rice, cooked & hot
-
1 cscallions (both greens & whites), sliced
-
tabasco
- CAJUN SPICE:
-
1/2 tspthyme, dried
-
1/4 tspwhite pepper
-
1 tspsalt
-
1/4 tspblack pepper
-
1/4 tspred pepper flakes
How To Make shrimp & crab gumbo

1In a small bowl, add all cajun spice ingredients; mix to combine & set aside.

2Rinse shrimp & pat dry with paper towels. In a medium skillet, cook flour over medium heat, about 6 minutes or until browned, stirring frequently. Place in small bowl & set aside to cool.

3In a dutch oven, heat oil over medium heat. Add onion, bell pepper, celery & garlic; cook & stir 5 minutes or until tender.

4Slowly whisk 16 oz or 1/2 of broth into browned flour. Add flour/broth mixture, remaining broth, water & cajun spice to dutch oven. Stir in okra. Bring to boiling; reduce heat. Cover & simmer 15 minutes.

5Add shrimp; cook 3 minutes or until shrimp are opaque. Gently stir in crabmeat; cook until heated through.

6To serve, serve over rice & garnish with scallions & tabasco sauce.
