My grandmother made this for a long time. I watched her to how she fixed it. They are so good and tasty.

Ingredients

pink or red salmon, drained, boned and flaked

eggs, beaten
1 1/2 c
plain dry bread crumbs, divided
1/2 c
finely chopped onion
1 Tbsp
chopped fresh parsley
1/4 tsp
salt
1/8 tsp
black pepper
2 Tbsp
vegetable oil

Directions Step-By-Step

In a large bowl, combine the salmon, eggs, 1 cup bread crumbs, onion, parsley, salt and pepper; mix well. Form into 6 patties about 1/2 inch thick. Place the remaining 1/2 cup bread crumbs in a shallow dish and coat the patties on both sides in a large skillet, heat the oil over medium heat saute the patties for 3 to 4 minutes per side, or until golden brown. Drain on a paper towel-lined platter and serve immediately.
