This is an easy recipe that I made often, when I was working. As long as your fish is already thawed, it is a pretty quick fix. Time to thaw fish, isn't included.

Ingredients For italian-sauced fish

2 pkg16 ozs. each frozen flounder fillets, thawed

8 ozspaghetti sauce with mushrooms

4 oz(1 cup) mozzarella cheese, shredded

2 Tbsponion, chopped
How To Make italian-sauced fish

1Preheat oven to 350 degrees. Prepare a 15 1/2 x 10 1/2 x 1 in. baking sheet, by covering with aluminum foil and spraying with cooking spray. Gently, dry off thawed fish with paper towels. Sprinkle fish with salt, and arrange fish on the baking sheet.

2Mix the 8 ozs. spaghetti sauce with the chopped onion; pour over fish fillets, on baking sheet.

3Bake fish in preheated oven, uncovered, for about 25-30 minutes. Fish should flake easily with fork. Sprinkle fish with the 4 ozs. of shredded mozzarella cheese; return to oven, until cheese melts (about 3 minutes). Serves 6-8.
