MANGO BBQ SAUCE:
1/4 c
tomato sauce, reduced sodium
2 Tbsp
mango nectar
2 Tbsp
ketchup, reduced sugar
2 tsp
dark brown sugar, lightly packed
2 tsp
apple cider vinegar
1 tsp
dark molasses
1 tsp
garlic powder
1/4 c
tomatoes, diced
1/4 c
mango, diced
FISH:

tilapia fillets
GARNISH:
1 tsp
cilantro, dried

Directions Step-By-Step

In a medium bowl, combine tomato sauce, mango nectar, ketchup, brown sugar, vinegar, molasses, & garlic powder. Whisk thoroughly & then stir in diced tomatoes & mango.

Place fish & sauce in a container & toss to coat. Cover & let it marinate in the refrigerator for 30 minutes.

Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add fish & marinade. Once marinade begins to simmer, cover & cook until the fish is tender & cooked through, about 5 minutes.

Plate the tilapia & top with any excess marinade from the skillet. Garnish with cilantro & enjoy!
