My Dad was a legendary fisherman. When he came home with nice big catfish we would all help get supper ready fast. Those fresh fish were so good...... This recipe was Mom's favorite way to prepare catfish.

Ingredients For fresh catfish with a cornmeal crust

    egg, lightly beaten
  • 2 Tbsp
    lemon juice
  • 1/2 c
    flour
  • 1/4 c
    yellow cornmeal
  • 1/2 tsp
    each salt, pepper, garlic salt
  • 4
    catfish fillets
  • 3 Tbsp
    vegetable oil

How To Make fresh catfish with a cornmeal crust

    In a shallow bowl, combine the egg and lemon juice. In another shallow bowl, combine the flour, cornmeal, pepper, garlic powder and salt. Dip catfish into egg mixture, then coat with cornmeal mixture.

    In a large skillet, heat oil over medium heat. Fry fillets, two at a time, for 5-6 minutes on each side or until fish flakes easily with a fork. Serve with tartar sauce and lemon wedges.
