Other fish can be used. But I like the catfish.

Ingredients

2 c
leftover cooked catfish
1 c
cold mashed potatoes
1/4 c
onion, minced
2 tsp
lemon juice
2
eggs, beaten
1/2 tsp
salt
1/2 c
flour
1/2 c
oil

Directions Step-By-Step

Combine all ingredients, except for the oil; mix well. Shape into patties; dredge in flour. Fry fish cakes in hot oil about 10 minutes or until golden brown, turning once; drain well. Serve with cocktail sauce.
