baked fresh water drum with sauce

High school students attending sessions at the Kettle Moraine Youth Camp in Wisconsin, worked, studied, and learned about Wisconsin's Natural Resources, Invited to the DNR rough fish station on Lake Winnebago, they received a lecture about rough fishes and observed unloading operations of freshwater drum. Several hundred pounds were iced and sent back to the camp, and the students filleted the fish for their dinner. It was discovered the students were trading their desserts for additional helpings of freshwater drum fillets, the cook was contacted for her recipe, and here it is.

Ingredients

  • 4 TO 6 pounds freshwater drum fillets
  • SAUCE
  • 1 1/2 cups melted butter
  • 3 tablespoons lemon juice
  • 1 teaspoon celery salt
  • 1/8 teaspoon Worcestershire sauce

How To Make baked fresh water drum with sauce

  • Step 1
    Put all sauce ingredients in a kettle and heat well. Dry fish fillets, place fish on a flat pan. Brush sauce over fillets. Sprinkle with salt and pepper
  • Step 2
    Bake at 350 F for 15 to 20 minutes Sprinkle with paprika, just before removing from oven. (DO NOT PUT PAPRIKA ON FISH BEFORE BAKING OR FISH WILL HAVE A "FISHY" TASTE"
