Ingredients For baked cod casserole

2 Tbspolive oil, extra virgin, divided

2 lgonions, thinly sliced

1 cwhite wine, dry

4cod fillets
-
2 tspthyme, dried

1/2 tspsalt & pepper
-
2 slicewhole wheat bread, finely chopped

1/2 tsppaprika
-
1/2 tspgarlic powder
-
1 cgruyere cheese, shredded
How To Make baked cod casserole

1Preheat oven to 400 degrees F.

2Heat 1 Tbsp oil in a large ovenproof skillet over medium high heat. Add onions & cook, stirring often, until just starting to soften, 5 - 7 minutes. Add wine, increase heat to high & cook, stirring often, until the wine is slightly reduced, 2 - 4 minutes.

3Place cod on the onions & sprinkle with thyme, salt & pepper. Cover the pan tightly with foil; transfer to the oven & bake for 12 minutes.

4Toss the bread with the remaining 1 Tbsp oil, paprika & garlic powder in a small bowl. Spread the bread mixture over the fish & top with cheese. Bake, uncovered, until the fish is opaque in the center, about 10 minutes more.
