Ultimate Chicken Salad Sandwich

This is a favorite light meal or lunch in my home! I have had several people ask me for this recipe! Hope you enjoy!

Ingredients

4 medium
chicken breast halves, skinless and boneless
1/2 c
dried cranberries
1/2 c
walnut or pecan pieces
1/4 c
chopped celery
4 Tbsp
mayonnaise, light
1/2 bunch
green onions (optional)
pinch
salt and pepper
sliced french bread

Directions Step-By-Step

Bake chicken breast at 375 for approximately 30-40 minutes or until done. Remove from oven and cool.Chop chicken breast into tiny pieces.

Mix chicken pieces, walnuts, cranberries, celery, onion, salt, pepper and mayo in medium bowl.

Prepare as a sandwich onto the bread of your choice. You may add or subtract ingredients to your liking. I have also added seedless grapes or a piece of cheese. Goes well with a bowl of soup.
