In medium mixing bowl, add flour, paprika and salt.
In medium mixing bowl, whisk eggs, milk and lemon juice.
Coat chicken in flour, then in egg mixture, then again in flour mixture. Pour Canola oil in electric skillet about 1/2" deep. Place chicken in electric skillet on 375*, cover and cook for 12 minutes each side. (make in 2 to 3 batches).
Drain on paper towels.
