I fell in love with Thai cuisine when an exchange student from Hong Kong took us to our first Thai restaurant. I think the marriage of the best of Chinese with the best of Indian is the culmination of Thai. I love food from around the world and Thai is definitely one of my most favorite.

Ingredients For thai peanut shrimp and linguini

  • 1 lb
    linguini
  • kosher salt to taste
  • 2-3 qt
    water
  • 1 1/2 lb
    large shrimp, cleaned and deveined
  • 1/2 c
    creamy peanut butter
  • 1/2 c
    soy sauce, low sodium
  • 1/2 c
    chicken broth
  • 2 Tbsp
    honey
  • 1 Tbsp
    lime juice
  • 2 tsp
    crushed red pepper flakes
  • 1 1/2 tsp
    cornstarch
  • 1/2 c
    chopped green onions
  • 1-2 Tbsp
    canola oil

How To Make thai peanut shrimp and linguini

    Cook linguini in boiling salted water according to package instructions.

    Saute` shrimp in a little oil, just until they turn pink.

    Combine peanut butter, soy sauce, chicken broth, honey, lime juice, red pepper flakes and cornstarch in s saucepan and mix well. Cook stirring constantly, for 5 minutes or until thickened.

    Toss the shrimp, hot linguini, and sauce with green onions in a bowl. Spoon onto a serving platter and enjoy.
